Ingredients


1 cup Walnuts
1 cup Pecans
1/2 cup Coconut, shredded, unsweetened
8 date pitted Medjool date
1/2 tsp Vanilla extract, pure
2 cup Cashew nuts, raw (soaked for 2 hours)
4 fruit Lime (juiced)
1 tbsp Mint, fresh
1 tbsp Agave nectar (syrup)
1/2 tsp Vanilla extract, pure
1/4 cup Coconut, shredded, unsweetened
2 tbsp Chia seeds, ground

Instructions


Crust
Combine: walnuts, pecans, coconut, dates and vanilla in a food processor and line each cup with about 1 tbsp of the mixture, pack tightly

Filling
Combine: cashews, lime juice, mint, agave, vanilla, coconut and chia seeds in a food processor until smooth.
Fill each cup with mixture and chill for approximately 20 minutes.
Serve
