Sweet Potato, Kale, and Egg Power Skillet

2 tbsp Extra virgin olive oil
1 medium potato Sweet potato (peeled and cubed into 1/4-inch pieces or grated)
4 medium egg Egg
1/4 medium Red onion (diced)
1 clove(s) Garlic
1 dash Cumin
1 dash Himalayan sea salt
1 dash Black pepper
2 leaves Kale (chopped)


  1. Warm olive oil in a sauté pan over medium heat.
  2. Add sweet potato to the pan in a single layer and cook, tossing frequently, until all sides have browned (about 5 min). 
  3. Meanwhile, fry the eggs to your liking in a separate pan.
  4. Add the onions, garlic, and cumin to the potatoes and season with salt and pepper. Toss to combine and cook for 2 minutes, or until the onion becomes translucent.
  5. Add the kale to the potato mixture and saute for 1-2 minutes, just until the kale is wilted.
  6. To serve, place the potato mixture in a bowl and top with egg(s). Enjoy!
