2 avocado(s) Avocado (Ripe and diced)
1 cup diced Pineapple
1 cup Mango (Diced)
1/2 cup Red onion (Finely chopped)
1/2 cup Red cabbage (I use purple cabbage - thinly slice the cabbage)
1 medium pepper(s) Jalapeno pepper (Seeded,and finely chopped)
2 tbsp Cilantro (coriander) (Up to 3 tbsp)
1 fruit Lime (Freshly squeezed)
1 tbsp Olive Oil, Extra Virgin
1 tsp Salt and pepper (or to taste)


Combine all ingredients in a large mixing bowl.  Add salt and pepper to taste.  Prepare recipe just prior to serving.  Enjoy as a side dish, pair with whole grain tortilla chips or crackers or enjoy over a bed of fresh greens.
