Multipurpose Shredded Chicken (slow cooker)

2 3/4 kg Chicken breast, boneless, skinless
2 tsp Salt and pepper (each)
3 clove(s) Garlic (finely minced)
1 large Yellow onion (finely chopped)
1/2 cup Vegetable stock/broth, low sodium (or water)


  1. Place chicken breasts in slow cooker, and sprinkle with seasonings and vegetable broth. Cover and cook on low for 8 hours, or until the chicken shreds easily with a fork. Note: If making less chicken than original recipe, keep an eye on your slow cooker as the chicken will likely need less cooking time.
  2. Remove the chicken with tongs, and place in a stand mixer and use the paddle attachment to shred. You can also use a food processor or shred it by hand with two forks pulling in opposite directions. 


Use immediately, or freeze in ziplock bags or a sealed container.
