2 large egg Egg
2 tbsp Water
1 tsp Extra virgin olive oil
3/4 cup pieces White mushrooms
1 tbsp Goat cheese, semi-soft
1 dash Salt and pepper
2 tbsp Parsley, fresh (chopped; optional)


  1. In a bowl, whisk together the eggs and water. 
  2. Heat olive oil in a skillet over medium heat. 
  3. Add mushrooms and saute until tender, about 5 minutes. 
  4. Add eggs, but don’t stir; allow them to coat the bottom of the pan. When eggs are nearly set, add the cheese and fold in half.
  5. To serve, season with salt and pepper and garnish with parsley if desired.
