Ingredients


284 gm White mushrooms (traimmed, quartered)
1 tbsp Extra virgin olive oil
1 large Yellow onion (finely chopped)
2 large Carrots (coarsely grated)
4 clove(s) Garlic (minced)
1 1/2 tsp, ground Thyme, dried
1/2 cup Pecans (toasted and broken)
3 can (15oz) Lentils, canned (rinsed, drained)
3 large egg Egg (beaten)
1 1/2 cup Bread crumbs, plain
1/2 tsp Salt
1/2 tsp Black pepper

Instructions


Pulse mushrooms in food processor until finely chopped.

Heat oil in large skillet over medium heat. Add onion, carrots, garlic, thyme, and mushrooms. Cook, stirring, until golden brown, about 8 minutes. Transfer to large bowl.

Separately pulse pecans and then lentils in food processor until coarsely chopped. Add to vegetables. Stir in eggs, bread crumbs, salt, and pepper.

Form into desired shape and cook in skillet over medium-high heat until set and golden brown.
