My Chicken Parmesan Meatball Recipe

Ingredients


1/2 tsp Black pepper (or to taste)
1/2 cup Bread crumbs, plain
567 gm Chicken, ground, lean
1 medium egg Egg (whisked)
1 clove(s) Garlic (minced)
1 cup shredded Mozzarella cheese
3 tbsp Olive oil
1/2 tbsp Parmesan cheese, grated
1/2 cup Parmesan cheese, grated
1 tbsp Parsley, dried
1/2 tsp Salt (or to taste)
1 cup Tomato sauce, canned
1/2 medium Yellow onion (chopped into small pieces)

Instructions


Toss all of your ingredients into a large bowl (except for tomato sauce, olive oil and 4 tbsp parmesan) and using your hands mix until combined. 

Roll mixture into ping-pong-ball-sized meatballs. In separate bowl, mix tomato sauce and oil.

Brush each meatball with tomato sauce topping.

Sprinkle Parmesan cheese onto each meatball and bake for 15 minutes in the top third of a pre-heated 400F oven.

Serve with more sauce over pasta with crusty bread!
