Ingredients


1 cup Oat flour (gluten free oat; (or other flour of choice) See notes for homemade oat flour.)
1/2 cup Coconut flour (sifted)
1 tsp Baking soda
1 scoop fermented vegan proteins+ (vanilla), Genuine Health
1/4 tsp Salt
1 tbsp Tapioca starch
1 tbsp Orange peel (zest) (fresh)
1 large Egg
1 tbsp Coconut oil (melted; or butter)
1/4 tsp Vanilla extract, pure
1/4 cup Almond milk, unsweetened
1/2 cup Coconut, shredded, unsweetened
small Orange (Slices to garnish)

Instructions


  1. Preheat oven to 375F. Line or grease a muffins pan. Set aside.
  2. Combine your dry ingredients; flours, protein, starch,  and salt in a large mixing bowl.
  3. In another bowl, whisk together your juice, egg, extracts, oil, and milk.
  4. Scoop the mix muffins cups. place a thinly sliced orange on top of each muffin and a sprinkle of shredded coconut.
  5. Bake at 375 F for 18-25 minutes, depending on your oven. Check at 15 to make sure they don't burn. It depends on the flours you use and type of oven..
  6. Remove and let cool for 15 minutes until removing from pan.
  7. Serve or store in sealed container in fridge for later. These also freeze well for up to 4 months.
