1/4 cup | Coconut oil |
1/2 cup | Honey (or maple syrup) |
1/2 cup | Cacao powder, raw |
1/2 cup | Peanut butter, natural (chunky) |
1/4 tsp | Vanilla extract, pure |
2 cup | Quinoa, cooked |
1 cup | Coconut, shredded |
1/4 cup | Pumpkin seeds (pepitas) |
1/4 cup hulled | Hemp seeds, shelled (or sesame seeds- for garnish) |
1 tsp | Cinnamon (pinch) |
1 pinch | Salt |
Line baking sheet with parchment paper or oil.
Combine oil, sweetener, cacao in saucepan over medium heat. Bring to boil and stir constantly. Remove from heat.
Add in remaining ingredients and stir.
Let cool a bit.
Place on baking sheet in shape of cookie.
Sprinkle hemp seeds or sesame seeds on top and lightly press into cookie.
Freeze for a few hours to set.
