Peanut butter, natural
(any nut butter would work well)
1/3 cup hulled
Hemp seeds, shelled
1/2 cup
Rolled oats, dry
3 tbsp
Almond milk, unsweetened
Instructions
Start by adding the dates to a food processor and pulse for about one minute, or until they are finely chopped. Add chocolate chips and pulse for another 30 seconds. Add remaining ingredients and process until the mixture comes together. Depending on the peanut butter you use, you may want to refrigerate for 30 minutes so it is easier to work with. Portion using small cookie scoop, rolling into 16 balls.
Store in the freezer in an airtight container. If you have more than one layer of bites, add a layer of parchment paper in between to avoid sticking.
Note:
If you prefer a softer bite, they can also be stored in the refrigerator for up to 1 week.
