1/2 cup | Peanut butter, natural (Can substitute with any soy or nut butter of your choice) |
2 tbsp | Honey, raw |
1/2 tsp | Vanilla extract, pure |
1 dash | Salt |
1 cup | Rolled oats, dry |
1/4 cup | Oat flour (You can substitute ground flaxseed if desired.) |
1/4 cup | Puffed rice, brown (Puffed rice cereal) |
1/4 cup | Slivered almonds |
1/4 cup | Raisins, seedless (sultana) |
1/4 cup | Dark chocolate chips |
In a small bowl, combine the peanut butter, honey, vanilla extract, and salt.
Microwave for 20 seconds and stir until combined.
In a medium sized bowl, combine the oats, oat flour, and puffed rice cereal.
If you don't have oat flour, you can make it easily from oats. Simply grind oats in a food processor until they are a flour consistency.*
Add the peanut butter mixture to the oat mixture and stir well. It will be sticky and a little bit of a challenge to stir, but keep with it.
Add in the mix-ins of your choice. (If using chocolate, let it cool a little or the chocolate will melt!)
Stir again and crumble into granola bits.
*Make sure to measure the oat flour AFTER processing the oats. You can substitute ground flaxseed if desired.
This will keep in the fridge in a well-sealed container - for up to 6 months!
