1/2 cup | Peanut butter, natural (or other nut or seed butter) |
1/4 cup | Honey (up to 1/3 cup if you like more sweet) |
1/4 cup | Coconut oil |
1 1/2 cup | Rolled oats- Gluten Free |
1 tbsp | Pumpkin seeds (pepitas) |
1 tbsp | Sunflower seeds |
1 tbsp | Flaxseeds |
1/4 tsp | Sea Salt |
1/4 cup | Lily’s Dark Chocolate Baking Chips (or zazubean chocolate bars (melted)) |
1. Melt the peanut butter, honey and oil and stir until no clumps.
2. Add in the oats, seeds and salt (you can substitute any nuts or seeds you'd like, or add dried fruit like cranberries or raisins.) Mix until well combined.
3. Line a 8x8 baking pan with parchment paper, and transfer the mixture into the pan. Even out the mixture and flatten with a spatula.
4. Melt the chocolate and spoon on top of the bars. (Option to just put the chips right into the mixture).
5. Place in freezer for 10-15 minutes.
6. Remove form freezer, lift out the parchment paper with the bars and cut into desired pieces.
7. Store in the fridge, or keep in the freezer for longer storage time.
