Directions:
1. Open chilled can of coconut milk carefully and scoop off the thick layer of cream at the top
2. Place in a bowl, add remaining ingredients, mix well and enjoy!
Save the coconut milk left in the can for a curry dish or to pour over a bowl of Super Simple Granola. Add fresh chives and chopped garlic for a savory flavor or mix in some cinnamon and vanilla extract for a sweet spread.
