No Fuss Tomato Salad

The easiest, most delicious, no-fuss tomato salad.

Ingredients


4 cup Arugula (spinach or watercress work well)
1/3 beet(s) Beets, boiled, drained (large)
6 piece Sun-dried tomatoes
150 gm Cherry Tomatoes (multicoloured)
30 gm Pumpkin seeds (pepitas)
2 tbsp Olive Oil, Extra Virgin

Instructions


  1. Slice the cherry tomatoes in half and cut up the beetroot into chunks.
  2. Lay your salad on the plate before adding all of the tomatoes, beetroot and pumpkin seeds.
  3. Drizzle over the olive oil and serve with crusty gluten-free bread, if you like.

Notes:

1/6 of a large beet contains moderate amounts of oligos.  Limit intake.
