681 gm Lamb, ground (or grass-fed beef)
1 medium White onion (chopped)
227 gm Cremini (Italian) mushroom (chopped)
3 medium Carrots (peeled and diced)
3 medium stalk(s) Celery (diced)
3 clove(s) Garlic (minced)
1 cup Bone broth, Organic
1 tsp Sea Salt
1 tsp Black pepper
1 tsp, ground Thyme, dried
1 tsp Oregano, dried
2 tsp Rosemary, fresh (or 1 tsp dried)
1 tbsp Coconut aminos, Coconut Secret (optional)
2 medium head Cauliflower (steamed until very soft - or turnip or sweet potato, or combo)
2 tbsp Extra virgin olive oil
2 tbsp Coconut oil

Instructions


Preheat oven to 350°F. Melt coconut oil over medium heat.

Add onion, mushrooms, carrots, celery and garlic to one pan. Sauté the veggies until they’re soft, about 10 minutes. Set aside.

Add ground meat to pan and saute until cooked through, about 15 minutes. Season ground meat with coconut aminos (optional), and spices.

Combine meat with vegetables in loaf or rectangular pan. Pour broth evenly over the meat and vegetable mixture.

In a food processor, puree the cauliflower with 2 Tbsp olive oil. Puree until the cauliflower mash is consistently smooth throughout. Spread mashed cauliflower over the meat and vegetable base.

Bake, uncovered, for 30 minutes. Serve hot.

This particular recipes serves more than 2. It serves 4 - 6. So you could halve the recipe if you choose — or freeze the rest.
