Not Your Average Cream Of Broccoli Soup Recipe

Ingredients


6 cup Vegetable stock/broth, gluten-free
2 potato Potato (medium; chopped)
1 head Broccoli, raw (chopped)
2 tbsp Olive Oil, Extra Virgin
1 medium Yellow onion (chopped)
1/2 tsp, leaves Basil, dried
1 pinch Sea Salt (freshly-ground; to taste)
1 dash Black pepper (freshly-ground; to taste)

Instructions


DIRECTIONS

  1. Sauté onion with olive oil in large pot until tender
  2. Add broth and potatoes to the pot and bring to a boil. Reduce heat and cover until tender.
  3. Meanwhile, steam broccoli until bright green.
  4. Add broccoli and basil to pot and blend with immersion blender until smooth
  5. Add salt and pepper to taste.

SUBSTITUTIONS/ALTERNATIVES

You can sauté the onion in coconut oil if you would like and add ½ clove of garlic for a bit of a kick. For a sweeter taste, try sweet potatoes in place of the potatoes. It’s delicious!
