1 1/2 cup Partly skimmed milk, 1% M.F. (or use coconut milk - unsweetened)
1 large Egg
2 tbsp Canola oil
1 tsp Vanilla extract, pure
1 cup Wheat flour, whole wheat (for mix)
3/4 cup Rolled oats, dry (for mix)
4 tsp unpacked Brown sugar (for mix)
4 tsp Sweetener, sucralose, SPLENDA (for mix)
1 tbsp Baking powder (for mix)
1 tsp Cinnamon (for mix)
1 pinch Sea Salt (for mix)


  1. To make pancakes:
    • In a bowl, whisk together milk, egg, canola oil, and vanilla.
    • Place pancake mix ingredients in a separate bowl
    • Pour egg mixture into dry mixture and stir just until dry ingredients are moistened (don’t worry about lumps).
  2. Heat a large non-stick skillet over medium heat until hot (a drop of water will sizzle).
  3. Spray with non-stick cooking spray.
  4. Drop batter by ¼ cup (60 mL) measure onto the pan.
  5. Cook pancakes for 3 minutes or until bubbles break on top and underside is golden brown; turn and cook the other side until golden.
