Oat Crackers with Sesame, Oregano & Sage

2/3 cup Gluten free flour
2/3 cup Oat flour
1/2 tsp Salt
1/4 cup Water (more as needed)
3 tbsp Olive Oil, Extra Virgin
1 tbsp Sesame seeds
3/4 tsp Sea Salt
1 dash Oregano, dried (or rosemary or thyme)
1 dash Sage, ground


  1. Preheat oven to 350 degrees.
  2. Add parchment paper to large cookie sheet.
  3. In medium bowl, mix gluten free flour, oat flour, salt, water, olive oil and sesame seeds. Mixture should be dough like and not too wet to roll out (add more water or gluten free flour, if needed).
  4. Roll out dough between 2 pieces of parchment paper to about 1/8th inch thick.
  5. Using knife or cookie cutter, cut dough into small crackers.
  6. Sprinkle salt and herbs on top of crackers pressing gently into crackers.
  7. Bake for 20 minutes or until light brown on bottom (Crackers should be crunchy)
