1. Remove pits from dates.
2. Add peanuts and dates to high-powered food processor and begin to blend.
3. Remove blade from food processor and roll mixture into tightly-packed balls about 1-2 inches in diameter. Pat balls down onto no-stick bake sheet or one lined with parchment paper or tinfoil. Alternatively, use a small plate or cookie cutter to mold or shape cookies into circles.
4. Remove cookies from sheet with spatula using care not to break their shape.
5. Store finished cookies in fridge or in freezer.
