1 1/3 cup | Oats, large flakes, dry (whole grain) |
1 tsp | Baking powder |
1/2 cup | Cottage cheese (2% M.F.) |
2 medium | Egg |
1/2 cup | Water, filtered |
1 tsp | Butter, unsalted |
1 tsp (level) | Psyllium seed husk |
1 tsp | Vanilla extract, pure (optional) |
1 tbsp | Cinnamon |
4 tbsp | Greek yogurt, plain, 5% M.F., Liberte (or yoghurt alternative) |
1 cup | Raspberries (for topping) |
1 medium | Banana (s) (slliced- Topping) |
2 tbsp | Honey, raw |
1. Add oats and baking powder to a food processor or blender and blend until they're as fine as flour. Remove to a bowl.
2. Add the cottage cheese, eggs, water, vanilla, oil and cinnamon to the blender and blend until smooth. Add the wet ingredients to the bowl with the dry ingredients and stir to combine.
3. Scoop about 1/4 cup of batter for each pancake and pour onto a hot griddle spray with non-stick cooking spray. Cook on one side until bubbles begin to appear on the surface of the pancake. Flip and cook on the other side.
Add fresh berries, a dollop of yoghurt (or yoghurt alternative) and drizzle with honey
For additional nutrition - serve with banana slices or your choice of berries!
