This Old-Fashioned Baked Apple Recipe made a little healthier!
Ingredients
4 date pitted

Medjool date
(ground in a blender or processor)

Cinnamon

Pecans
(finely chopped)

Instructions
- Pre-heat oven to 350°F
- Combine the ground dates, cinnamon, nutmeg, and chopped pecans in a bowl. This will serve as a filling for the baked apples.
- Core each apple using a knife or apple corer. Ensure roughly ½ inch of the apple remains at the bottom to serve as a sturdy base.
- Fill each apple with filling and top with a small drizzle of coconut oil.
- Bake apples for 35 – 40 minutes in a baking dish filled with hot water. Apples should be tender but not overcooked.
Notes:
Store refrigerated for up to 5 days. Reheat in the microwave or a 350 F (176 C) oven until warmed through.
