Ingredients


4 date pitted Medjool date (ground in a blender or processor)
1 tsp Cinnamon
1/4 tsp Nutmeg, ground
1/4 cup Pecans (finely chopped)
4 medium Apple
1 tbsp Coconut oil
3/4 cup Water (boiling)

Instructions


  1. Pre-heat oven to 350°F 
  2. Combine the ground dates, cinnamon, nutmeg, and chopped pecans in a bowl. This will serve as a filling for the baked apples.
  3. Core each apple using a knife or apple corer. Ensure roughly ½ inch of the apple remains at the bottom to serve as a sturdy base.
  4. Fill each apple with filling and top with a small drizzle of coconut oil.
  5. Bake apples for 35 – 40 minutes in a baking dish filled with hot water. Apples should be tender but not overcooked.

Notes:

Store refrigerated for up to 5 days. Reheat in the microwave or a 350 F (176 C) oven until warmed through.
