1/2 cup Coconut milk, reduced fat
1/2 tbsp, ground Basil, dried (dried)
1/2 tsp Oregano, dried (dried)
1 dash Salt and pepper (to taste)
4 medium slice Bacon (Wright Brand; (; (I used their Applewood Smoked Bacon)))
1 tbsp Olive Oil, Extra Virgin
2 clove(s) Garlic (diced)
426 gm Diced tomatoes, canned (drained)
2 cup Baby spinach
1 leaf Thai basil, fresh (Fresh; (chopped, as garnish)

Instructions

  4. {u'text': u'Add olive oil, garlic and spinach to the skillet and cook until the spinach is wilted, about 3 minutes. Add in the tomatoes and stir to combine.', u'@type': u'HowToStep'}
  5. {u'text': u'Pour the egg mixture over the spinach and then stir in the bacon. Stir the entire skillet once or until well combined. Let sit (without stirring) for about 2 minutes, just until the edges are set.', u'@type': u'HowToStep'}
