5 drumstick Chicken, drumstick (skinless)
2 tsp Olive Oil, Extra Virgin
3 tbsp Lemon juice
1/2 tsp Salt
1/2 tsp Black pepper
1/2 tsp Oregano, dried
1/2 cup Broccoli, raw
1 cup Carrots
1 potato Potato

Instructions


  1. Preheat the oven to 180°C and line a large baking sheet with parchment paper.
  2. Place the chicken in a large bowl and add olive oil, lemon juice, salt, pepper, oregano, and any other spices you like. Make sure the chicken is thoroughly coated. 
  3. In another large bowl, add the broccoli and carrots. Add olive oil and any additional spices (garlic powder, onion powder, chili powder, etc.). Mix thoroughly.
  4. Place chicken on one side of the baking sheet, the vegetables on the other side, as well as the potatoes, which have been pierced a few times with a fork.
  5. Cook for about 30 minutes, or until the chicken is cooked to an internal temperature of 74°C. The broccoli might be done sooner than 30 minutes. If so, remove from the pan earlier and continue to cook the chicken and potatoes until done.
  6. Remove from the oven and serve the chicken, broccoli, carrots and potatoes on a plate.
