One-Pot Mac & Cheese

2 1/2 cup Partly skimmed milk, 1% M.F.
1 cup Water
1 tbsp Butter, unsalted
1/4 tsp Salt
2 cup Pasta, macaroni, elbow, whole wheat, dry
3 cup shredded Cheddar cheese, reduced fat (18%)
1/2 cup Mascarpone cheese
2 tsp Dijon mustard (optional)


Boil milk with water, butter and salt in a pot over medium.

Add macaroni. Cook, stirring often, until macaroni is tender, 10 to 12 min.utes (It is OK if it is a little saucy).

Remove from heat. Stir in cheddar, mascarpone and mustard until cheese melts.
