One-Pot Shrimp Pasta & Gremolata

Ingredients


1 clove(s) Garlic (minced)
1 tsp Lemon peel (zest)
2 tbsp Parmesan cheese, grated
1/4 cup Parsley, fresh (chopped)
1 tbsp Pine nuts, dried
16 medium Shrimp, raw
35 gm Spaghetti, whole-wheat, dry (or pasta of choice)
1 cup Spinach

Instructions


Bring a pot of water to a boil. Add the pasta.

3 minutes before the pasta is finished cooking, add the shrimp.

Add spinach to the pot of pasta during the last 30 seconds of cooking.

Meanwhile, make your gremolata by combining chopped parsley, garlic, lemon zest, salt and pepper to taste.

Toss pasta and shrimp with olive oil and top with gremolata, pine nuts and parmesan.
