One-Pot Vegan Vodka Sauce Pasta

2 cup Almond milk, unsweetened
1 tsp, ground Basil, dried
3/4 cup grated Carrots
3/4 cup Cremini (Italian) mushroom (chopped)
1/2 cup Eggplant (minced)
2 tsp Nutritional yeast
1 dash Onion powder
1/2 tsp Oregano, dried
2 cup Marinara pasta sauce
1 dash Red pepper flakes
2 1/2 cup Rotini, dry (or gluten free)
1 dash Salt (to taste)
2 tsp Tomato paste, canned
1 tbsp Vodka (40% alcohol by volume) (optional)


Add everything but the salt to a deep skillet and push the pasta underneath the liquid. Bring to a boil, then turn the heat down to medium-low and simmer until the pasta is al dente, about 10 minutes.

Stir every few minutes so everything does not stick to the bottom of the pan. Cook for about 9 minutes or until the pasta is tender. The timing will vary depending on the shape and kind of pasta you use.

Taste and add salt if needed.
