Ingredients


2 cup Pasta, macaroni, elbow, whole wheat, dry
227 gm Tempeh (tempe)
1 tbsp Extra virgin olive oil
1 cup Marinara pasta sauce
2 cup Red mini potato (chopped, for cheese sauce)
1 1/2 cup chopped Carrots (for cheese sauce)
1/2 cup Water (for cheese sauce)
1/3 cup Extra virgin olive oil (for cheese sauce)
1/2 cup Nutritional yeast (for cheese sauce)
1 tbsp Lemon juice (for cheese sauce)
1 tsp Onion powder (for cheese sauce)
1 tsp Garlic powder (for cheese sauce)
1 tsp Parsley, dried (for cheese sauce)
1/2 tsp Allspice, ground (for cheese sauce)
1 pinch Salt and pepper (for cheese sauce)
1 tsp Paprika
1 tsp Cumin
2 tsp Parsley, dried
1 pinch Salt and pepper (to taste)
1 medium pepper(s) Red bell pepper (diced)
1/2 medium pepper(s) Yellow bell pepper (diced)
1 cup Green onion, scallion, ramp (diced)

Instructions


Prepare the cheese sauce: Steam or boil the potatoes and carrots until tender. When done, place everything into a blender and run until smooth and creamy. Scrap down the sides if necessary.

Chop up tempeh into small pieces and place in skillet with extra virgin olive oil.

When the tempeh is easily broken down into small pieces (you can do this while it's in the skillet using a spatula to break it up) add in marinara sauce and all the spices.

Cook elbow macaroni according to package instructions.

When the pasta is done add two cups to the tempeh mixture along with 1 1/2 cups of the vegan cheese sauce, yellow and green onions and red bell pepper.

Mix everything well and adjust seasonings to your liking if need be. Keep mixing around on low to medium heat for 5 minutes.

Serve immediately and enjoy!
