One-Veggie Pesto Noodles

1 head Broccoli, raw (cut into florets)
6 tbsp Basil pesto (or Easy Parsley Pesto)
2 cup Pasta, Fusilli, dry


Steam and blanch broccoli.

Cooke pasta according to package directions.

To a pan add broccoli, a pesto, and a bit of the pasta cooking water. Heat gently for a couple minutes. Add pasta, heat and stir to combine.

Other one-veggie ideas: zucchini, squash, parsnip
