        | 1 head | Escarole (large, cut into quarters) | 
| 1 head | Radicchio (cut in half lengthwise) |

| 1 tbsp | Balsamic Vinaigrette (Walden Farms) | 
1. Preheat oven to 400°F, and spray a large glass baking dish with cooking spray.
2. Mist the escarole with cooking spray and season.
3. Spread the escarole in a thin layer and bake for 15 minutes then flip the escarole and continue cooking (8-10) until tender.
4. Serve with a drizzle of Walden Farms balsamic dressing.
