|1 head||Escarole (large, cut into quarters)|

|1 spray (about 1/3 second)||Cooking spray, vegetable oil|
|1 dash||Garlic powder (to taste)|
|1 pinch||Kosher salt (to taste)|
|1 dash||Black pepper (to taste)|
|1 tbsp||Balsamic Vinaigrette (Walden Farms)|
1. Preheat oven to 400°F, and spray a large glass baking dish with cooking spray.
2. Mist the escarole with cooking spray and season.
3. Spread the escarole in a thin layer and bake for 15 minutes then flip the escarole and continue cooking (8-10) until tender.
4. Serve with a drizzle of Walden Farms balsamic dressing.
