1 head Escarole (large, cut into quarters)
1 head Radicchio (cut in half lengthwise)
1 spray (about 1/3 second) Cooking spray, vegetable oil
1 dash Garlic powder (to taste)
1 pinch Kosher salt (to taste)
1 dash Black pepper (to taste)
1 tbsp Balsamic Vinaigrette (Walden Farms)


1. Preheat oven to 400°F, and spray a large glass baking dish with cooking spray.
2. Mist the escarole with cooking spray and season.
3. Spread the escarole in a thin layer and bake for 15 minutes then flip the escarole and continue cooking (8-10) until tender.
4. Serve with a drizzle of Walden Farms balsamic dressing.
