Bring water to a boil. Remove 1/2 cup of boiling water and place in a bowl with the cacao nibs, goji berries, mulberries, almonds and pumpkin seeds. Set aside to soak. Add oats, amaranth and cinnamon stick to pot and simmer uncovered for 30 minutes, stirring occasionally paying special attention to the last 10 minutes. Remove cinnamon stick and throw away. Add soaked ingredients and spices and mix until liquid is absorbed. Serve oatmeal in a bowl and top with coconut milk, bee pollen and lemon zest.
