Italian Pasta Salad

This cold pasta dish is easy to make and a perfect addition to any potluck, barbecue, or family dinner.

Ingredients


6 cup Pasta, whole wheat, cooked (rotini, bowtie, etc.)
2 cup Grape tomatoes (halved)
1/2 cup Frozen green peas (thawed)
1 medium pepper(s) Red bell pepper (seeded, julienned)
4 clove(s) Garlic (minced)
1/2 small Red onion (chopped)
2 cup Cucumber (Chopped)
1 cup Black olives (sliced)
1/4 cup Parmesan cheese, shredded (or vegan parmesan)
1/2 cup Italian salad dressing (vinaigrette)

Instructions


  1. Cook Rotini according to package directions and rinse with cold water.
  2. In a large bowl, add the grape tomatoes, cucumber, thawed peas, red bell pepper, garlic, red onion, and black olives and mix together. 
  3. Add the cooled, cooked pasta, Italian salad dressing, and parmesan cheese (or vegan parmesan) to the bowl, mix well, and serve.

Add protein

  • Add 1/2 cup of your favourite protein source. Try sliced chicken, tofu, or chickpeas
