100 gm Rice noodles, dry
2 tbsp Olive Oil, Extra Virgin
4 medium shallot(s) Shallots
2 packet Monk Fruit in The Raw Natural Sweetener
160 gm Chicken breast, boneless, skinless (sliced)
2 tsp Fish sauce
2 tsp Miso paste
2 tbsp Tamarind paste
1 tsp Hot pepper (chili) flakes (to taste)
4 tbsp Garlic chives (cut into 1 inches)
1/2 cup Water, filtered

Instructions


1. Heat oil in a pan, add shallot and then garlic, fry until fragrance.
2. Add chicken.
3. Season with fish sauce, miso, chili, tamarind, monk fruit, then the noodle.
4. Add water to dilute everything and soften the noodle. Keep cooking, stir from time to time to make sure the noodle get boil all over.This should take around 10 minutes
5. When done, noodle should be soft with a little bit of sticky sauce, add the garlic chive and serve hot.
