1 cup | Almond butter (or choice of nut butter) |
1 tsp | Apple cider vinegar |
1/2 tsp | Baking soda |
2 1/2 medium | Banana (s) (very ripe) |
2 medium | Egg |
1 1/2 tbsp | Honey (or 10 drops liquid stevia) |
5 pitted prune(s) | Prunes (chopped) |
1 tsp | Vanilla extract, pure |
1. Preheat oven to 400 degrees.
2. Place all ingredients into a blender or food processor. Blend until well mixed: batter will be sticky.
3. Pour batter into a greased mini muffin tins.
4. Bake in a 400 degree oven for 8 minutes or so.
5. If making larger muffins, increase baking time to 12-15 minutes.
