Preheat oven to 350° F. Grease a 7.5” by 3.5” loaf pan with a bit of coconut oil. Set aside.
In a large mixing bowl, whisk together the eggs and egg whites until combined.
Add the coconut milk and coconut oil and whisk until combined.
Add the tapioca starch, coconut flour, and salt. Stir until fully incorporated.
Add the baking soda and apple cider vinegar. Stir until mixed well.
Pour batter into the prepared loaf pan.
Bake for 40 minutes, until the top is golden and firm to the touch, and a toothpick inserted near the center of the loaf comes out clean.
Set the pan on a wire rack to cool for 10 minutes. Remove loaf carefully from the pan and place on the wire rack to cool completely.
