2 cup Almond flour/meal, Bob's Red Mill
1 cup Coconut flour
2 tsp Nutmeg, ground
3 tsp Cinnamon
1/4 cup Maple syrup (or honey)
250 gm Coconut oil (or ghee, or butter)
6 medium Egg
2 medium Apple (peeled and grated)
3/4 cup Raisins, seedless (sultana)
1 tbsp Coconut flour (for the crosses)
1 tbsp Tapioca starch (for the crosses)
1/2 cup Water (as needed)


  1. Preheat your oven to 180°C (350°F) and line 12 muffin tins.
  2. In a large bowl, mix the almond meal, coconut flour, nutmeg, and cinnamon in a bowl.
  3. Add the maple syrup, coconut oil (or butter/ghee), and eggs. Mix well.
  4. Then, add the apple and raisins. Mix again until the batter becomes doughy.
  5. Roll dough into 12 evenly-sized balls. Place them into the muffin cases and press down a little.
  6. To make the crosses, place 1 tbsp coconut flour and the tapioca starch in a small bowl. Gradually add drops of water while stirring, until thick white paste forms. Use a fork to make sure there are no lumps. Put the paste into a piping bag, and pipe a cross onto the top of each bun.
  7. Place the buns into the oven for 30 minutes.
  8. Serve without the muffin cases (so they look more bun-like), warmed and with butter.
