Paleo Raspberry Balsamic Glazed Salmon

681 gm Atlantic salmon, wild
2 tsp Extra virgin olive oil (or ghee)
2 clove(s) Garlic (minced)
2 date(s) Dates (chopped)
3 tbsp Balsamic vinegar
1 cup Raspberries
1 1/2 tsp Thyme, fresh
1/4 tsp Sea Salt
1 dash Black pepper (to taste)

Instructions


  1. In a small saucepan over medium-low heat, add oil. Heat until the fat starts to shimmer. Add garlic and cook, stirring continuously, for 30 seconds.
  2. Add dates, balsamic vinegar, and raspberries. Cook, stirring occasionally until sauce is thickened - about 5-6 minutes Remove from heat and stir in thyme and salt.
  3. Optional: strain sauce through a fine-mesh strainer to remove seeds.
  4. Preheat broiler. Position rack 5-6 inches below the broiler element.
  5. Place salmon fillets skin down on a baking sheet, sprinkle each filet with salt and pepper. Brush each fillet with 2-3 tablespoons of sauce.
  6. Broil salmon for about 8-10 minutes or until salmon is opaque and flakes easily with a fork.
  7. Serve salmon with additional sauce.

  • Brown rice or quinoa and salad or roasted vegetables like asparagus, broccoli, bell peppers, and onions
