454 gm Beef, ground, extra lean
1 tsp Black pepper
2 cup sliced Carrots
2 large head Cauliflower (trimmed, chopped, steamed until very soft)
2 cup diced Celery
1 cup Chicken broth (stock)
2 tbsp Extra virgin olive oil
2 tbsp Extra virgin olive oil
1/2 tsp Paprika
1/2 tsp Sea salt
454 gm Turkey bacon, raw (cut into 1/2-inch slices)
1 large Yellow onion (diced)

Instructions


1. Heat olive oil in a very large frying pan.

2. Sauté onion for 15 minutes until soft. Add bacon pieces to pan and sauté until cooked, about 10 minutes.

3. Add carrots and celery to pan and sauté in bacon fat for 10 minutes until soft.

4. Add ground beef to pan and sauté until brown, just a few minutes. Season with salt, pepper and smoked paprika

5. Add chicken broth and cook down broth until 60% evaporated.

6. Place cauliflower in food processor and puree with olive oil until smooth.

7. Pour ground beef mixture into a 9 x 13 inch baking dish. Pour mashed cauliflower over beef mixture.

8. Bake at 350° for 30 minutes.
