Pre-heat the oven at 200°C (400°F) and lay a baking sheet into a tray.
Find a large round cookie cutter, of the simple circular type without a bottom.
Press the cutter onto the sheet and spread - very evenly - a heaped tablespoon of parmesan inside the cutter. Press the cheese well with your fingers, making sure it remains evenly spread. Carefully lift the cutter and repeat the process for as many crackers you want to make.
Bake for about 10 minutes or until you see the cheese starting to melt. Keep a close eye on the oven, as parmesan will quickly go from “just right” to “rightly burnt”.
Tip: you can include poppy or sesame seeds to create more flavours.
