Mediterranean Pasta with Ground Turkey

375 gm Pasta, Farfalle, dry (or pasta of choice)
454 gm Ground turkey, lean
2 tsp Extra virgin olive oil
1 cup Red onion (chopped)
1 tbsp Garlic (minced)
1/4 tsp Hot pepper (chili) flakes
1 1/2 can(s) (28oz) Diced tomatoes, low sodium, canned (squished up)
1/4 tsp Granulated sugar (optional; cuts through the acidity of tthe tomatoes)
2 can (13.5 oz) Artichoke hearts, canned (drained, halved)
227 gm Sun-dried tomatoes (with oil; chopped)
2 cup Baby spinach
1/4 tsp Salt
1 dash Black pepper


  1. Cook pasta according to package directions. Drain, reserving a little water.
  2. Add ground turkey to a non-stick fry pan and cook until no longer pink and cooked through. Remove from heat and set aside.
  3. Warm oil in a pot over medium heat.
  4. Add onion and sauté for 4 minutes or until softened.
  5. Add garlic and chili flakes and sauté 1 minute longer.
  6. Add tomatoes and sugar, bring to a boil, and simmer for 10 minutes or until flavors have come together.
  7. Add ground turkey, artichokes, sundried tomatoes, and spinach. Simmer gently for 5 minutes longer. Season with salt and pepper.
  8. Toss pasta with sauce, adding reserved water as needed. Sprinkle with parsley
