Pastry-Less Spanakopita with Mixed Greens

1/3 cup Extra virgin olive oil
1 medium Yellow onion (finely chopped)
7 cup Lettuce, spring mix (mesclun)
1 dash Sea Salt (to taste)
1 dash Black pepper (to taste)
4 large Egg (lightly beaten)
1/2 cup, crumbled Feta cheese


  1. Preheat oven to 180 degrees C and grease a flan dish.
  2. Heat olive oil in a large saucepan over medium heat and sauté onion until translucent. 
  3. Add greens and stir until wilted. Season with salt and pepper.
  4. Transfer greens to prepared dish, sprinkle with feta cheese and pour in the beaten eggs.
  5. Bake for 20 minutes, or until egg is cooked through and lightly browned.
