4 large egg | Egg (lightly beaten) |
1/3 cup | Extra virgin olive oil |
1/2 cup, crumbled | Feta cheese |
7 cup | Lettuce, spring mix (mesclun) |
1 medium | Yellow onion (finely chopped) |
1/8 tsp | Sea salt (to taste) |
1/8 tsp | Black pepper (to taste) |
1. Preheat oven to 180C and grease a flan dish.
2. Heat olive oil in a large saucepan over medium heat and sauté onion until translucent. Add greens and stir until wilted. Season with salt and pepper.
3. Transfer greens to prepared dish and sprinkle over feta. Pour over eggs.
4. Bake for 20 minutes, or until egg is cooked through and lightly browned.
