Heat 1 tablespoon of oil in a sauce pan at med-low temperature, sauté the chopped onions together with the minced ginger and garlic with a lid on top. Sauté until golden-brown.
Add snow peas, chopped tomatoes without peel, finely chopped spinach, cashew nuts finely chopped (raw cashews without salt), spices, salt and the remaining oil. Let it cook at low heat for 1 hour, mixing sometimes and adding hot water when it starts to stick to the bottom of the saucepan.
Serve with basmati or parboiled rice for a complete meal.
