1 1/2 cup All-purpose white flour
1/2 cup Granulated sugar (rounded)
2 tsp Baking powder
1/2 tsp Cinnamon
1/3 cup Vegetable oil
1 large egg Egg
1/2 cup Partly skimmed milk, 2% M.F. (doesn't have to be 2%)
1 tsp Vanilla extract, imitation, without alcohol
2 medium Peach (skinned and diced)
1 tbsp Lemon juice


In a large bowl, mix together flour, sugar and baking powder.

In a small bowl, mix together oil, egg, vanilla and milk.

Add wet ingredients to dry ingredients and stir just until moistened.

Peel and chop peaches and add to lemon juice.

Gently fold in peaches into muffin batter.

Fill muffin tin.

Bake at 400 degrees F for 20 minutes.


If you want your muffins to be super peachy, feel free to try adding 3 peaches!

Another tip when you make muffins is to let them cool in the pan before you remove them. If you remove them when they are still slightly warm, they might be slightly moist. As you can see in the image above, I have placed a Bounty paper towel underneath the muffins to absorb some of the moisture.
