Peanut Butter and Jelly Oatmeal
Health Highlights
A delicious alternative to a peanut butter and jelly sandwich.

Ingredients

1 cup Rolled oats, dry
1 cup Frozen berries (berry sauce)
2 tbsp Water (berry sauce)
1 tbsp Maple syrup, pure (berry sauce)
1 1/2 tsp Lemon juice (berry sauce)
1 dash Cinnamon (berry sauce)
1 pinch Sea Salt (berry sauce)
1/2 tbsp Chia seeds (berry sauce)
2 tbsp Peanut butter, natural
2 tsp hulled Hemp seeds, shelled

Instructions

  1. Prepare oatmeal following package instructions.
  2. Meanwhile, in a small saucepan over medium heat, add the frozen berries and water. Cook until berries start to pop open and become juicy, about 5 minutes.
  3. Reduce the heat to low and stir in the maple syrup, lemon juice, cinnamon, sea salt, and chia seeds. Cook until the sauce reduces and thickens slightly, stirring occasionally to prevent sticking, about 5 minutes
  4. Dish oatmeal into a bowl and stir in the peanut butter.
  5. Drizzle berry sauce overtop and sprinkle hemp with hearts to serve.

Notes:

Quick Tip: Prepare the berry sauce the night before to save time in the morning.

Texture modifications for stroke recovery: If a softer texture is required, process all ingredients in a food processor or blender until desired consistency is reached.
