Peanut Butter Chocolate Chip Granola Bars

1 cup

Peanut butter, natural
(all-natural; (Smucker's or Teddie Brand works well))
|
1/4 cup
|
Butter, grass-fed, salted
(melted; or oil)
|
1/2 cup
|
Maple syrup
|
1 tsp
|
Vanilla extract, pure
|
1/4 cup
|
Brown sugar
(packed well (could use even 1-2 TB if you want to reduce sugar))

1 1/2 cup

Rolled oats, dry
(old-fashioned rolled)

1/4 cup

Steel cut oats, dry
(steel-cut)

1 cup

Oat bran, gluten-free, dry
|
1/2 cup
|
Dairy-free mini chocolate chips
|
1/2 cup
|
Pumpkin seeds (pepitas)

Instructions
- Preheat oven to 350 degrees F.
- Mix peanut butter, butter, maple syrup, vanilla extract and brown sugar until creamy.
- Add in rolled oats, steel cut and oat bran.
- Fold in chocolate and pumpkin seeds.
- Press FIRMLY into 9 x 13 parchment paper lined casserole dish.
- Bake 25-30 minutes until lightly brown on sides.
- When cooled, cut into 16-20 bars as desired.
- Let cool for 20 minutes, and cut into 15-20 bars. Pack in wax paper bags and store at room temperature. Will be good for the week!
