Mix all of the ingredients together (except the extra chocolate chips) until well blended.
Spread the mixture into a parchment-lined loaf pan and sprinkle with the extra chocolate chips.
Store in the freezer for about one hour. Cut into about 18 pieces, store in the freezer, and enjoy!
