Peanut Butter Granola
Health Highlights
This is a simple, minimal ingredient granola that you can easily customize and add to when you are enjoying it as a snack or for breakfast.

Ingredients

2 cup Oats, dry
6 tbsp Peanut butter, natural
1/4 cup Honey
2 tbsp Chia seeds
3/4 tsp Cinnamon
1/2 tsp Sea Salt
1/2 tsp Vanilla extract, pure

Instructions

Preheat the oven to 325F, and lightly grease a baking pan.

Mix all of the ingredients together in a large bowl until well combined.  If your peanut butter is not runny, melt it with the honey in the microwave or on the stovetop until slightly runny, and then add to the other ingredients.

Spread the mixture on the prepared baking sheet, and bake for about 20 minutes until granola is lightly browned.  Stir the granola once about half way through.

Remove from the oven and let cool, then break into pieces and enjoy!

Store in an air-tight container for up to two weeks.

Notes:

Enjoy this granola as a cereal or with yogurt and added toppings such as berries, pumpkin seeds, walnuts, dried cranberries, or coconut flakes.
