Peanut Butter Oatmeal Date Balls

Ingredients


10 date pitted Medjool date
2 tbsp Water
1/2 cup Oats, dry
1/4 cup Peanut butter, natural (or alternate nut butter of choice)
2 tbsp hulled Hemp seeds, shelled
2 tbsp Chia seeds
1/4 cup Walnuts (chopped)

Instructions


1. Soak the dates in warm water for 10-15 minutes to soften, then drain the water.

2. Pulse the softened dates and the water in a food processor until a paste forms.

3. Mix the date paste, oats, peanut butter, hemp seeds, and chia seeds together until well blended. Chill in the fridge for 20 minutes to allow the mixture to harden.

4. Form tablespoon-fuls of the mix into a ball with your hand. Working with one ball at a time, roll each ball into the chopped walnuts. 

5. Enjoy immediately or store in the fridge or freezer.

Notes:

Original recipe makes 10-12 balls.
