454 gm | Pasta, Penne, dry (spaghetti or other pasta works too!) |
4 cup | Broccoli, raw |
4 medium | Carrots |
2 cup | Frozen edamame (soybeans) |
4 green onion (stem) | Green onion |
1/4 cup | Peanut butter, natural (look for peanut-only peanut butter) |
1/4 cup | Soy sauce, low sodium |
1 1/2 tsp | Garlic powder |
1 tsp | Sriracha |
1/2 cup | Water |
1. Bring water to a boil in a large pot.
2. Boil pasta according to instructions and strain.
3. Dice carrots, chop brocolli.
4. Add 1/4 cup water to a frying pan along with carrots and sautee on medium heat with lid on for 5 minutes.
5. Add frozen edamame, cover with lid, and sautee for another 4 minutes.
6. Add chopped broccoli, cover, and saute for another 4 minutes then remove from heat.
8. Mix peanut butter, soy sauce, 1/4 cup water, garlic powder, and sriracha in a small bowl.
9. Return strained pasta to pot and pour peanut sauce on top. Stir until well combined.
10. Add vegetables to pasta and to evenly incorporate.
11. Add diced green onions and peanuts on top for garnish, enjoy!
